Class Experience

Culinary Boot Camp: Elevated uses a building-block approach, continuation of Boot Camp 1.0.  This class series offers the home cook practical, next-level culinary guidance. We will tackle knife skills, introduction to black roux (gumbo), combination cooking, deep frying techniques including fried chicken, beer battering, easy yeast bread, and more. 


Each class is based on recipes, and taught hands-on by a professional chef. No matter where you are in your culinary journey, you will learn how to make these recipes and make them well. Have no fear!


Menu:

Week 1- Knife Skills, Chicken Fabrication, Roasted Chicken, Kansas City Barbeque Sauce, Chicken Fried Rice, Chicken Stock.

Week 2- Dark Roux, Gumbo, Focaccia Bread, Fish in Papillote with Dijonnaise Sauce, Ham, and Cheese Potato Croquette

Week 3 – Poached Salmon Caesar Salad,  Caesar Dressing, Gnocchi in Brown Butter and Sage, Italian Meatballs, Limoncello Ricotta Cheesecake

Week 4 – Shrimp Newburg, Parmesan Spinach Crispy Polenta, Brioche, Tomato Basil Soup.

Week 5 – Beer Battered Cod, Fried Chicken Breast with Hot Honey, Tempura Vegetables, Rice Pilaf, Clam Chowder

Week 6- Classic Cheese Souffle, Classic Chocolate Souffle, Cinnamon Rolls, Sabayon with Lemon Shortbread.

Classes are approximate 3 hours - 3.5 hours


Missed Class Policy:

  • Students cannot miss the first class. If you do, you must start over in the next available semester. Refund or Credit will be given based on our terms and conditions.
  • If you miss one class, students can make up the classed missed in the next semester, and continue on with the rest of the semester.
  • If two classes are missed and you would like to make up missed classes next semester, you must pay an additional $85 per class missed, ($170)
  • If three or more classes are missed, you cannot finish this semester, and must pay $85 x 3 class ($255) for the next semester.

  • Exception: If you get sick, we will wave the fee with a doctor's note. Please do not come to class ill.
  • If you would like to get a refund or credit, please see our terms and conditions.
  • If you are unhappy, please let us know.


Price is per person, and unfortunately, Sawyer is limited in its ability to register multiple adults for a single class. So, if you would like to register another adult for this class, you must sign them up as your child. Simply choose "ADD CHILD” and enter your guests name and a birthday. This will allow you to register another participant. Price is per person, so it will add the additional cost for the seat. Or you can have your guest(s) create an account and register themselves separately.

Loved:

Chef David was WONDERFUL - he was very clear in his explanations and paced all the activities very well. He gave great examples of how to use each of the techniques and also additional tips and hints that were very practical (e.g. how to shop for fish, how to cut herbs etc.)

Improvements:

Don't spend an entire day frying things. Provide all the recipes (we did not receive the last day's) and provide them earlier in the class. Since they are not as complete as the instruction it would be great to have them in real time to annotate with additional information on processes etc. It would also be great to have some healthier alternatives - both a healthier take on the traditional recipes or an entire class (or even a bootcamp) on a healthier cuisine (mediterranean etc.).

Excellent classes with delicious recipes, we got allot of tips and tricks which I appreciated being a newer cook. I'm traveling and took this course while visiting and it was a very welcoming environment. I really loved this experience and would recommend it to anyone!

Improvements:

Maybe something to elevate the teachers voice a little? I sometimes struggle to hear everything in a busy room

I love the variety of the items we prepare and the detailed instructions by Chef Patrick. There are only 6 of us in this class, so the individualized attention makes it a more intimate learning environment.

I wish the class was a little earlier

The class is engaging and interesting! Chef Patrick is a great teacher, and each week's skills are challenging enough to provide opportunities for growth, but accessible enough for a sense of accomplishment!

Improvements:

It would be helpful to get written copies of each week's recipes at the end of that week's class, instead of waiting to receive them at the end of the course
